He buys only top-quality grapes from trusted growers in Burgundy and Beaujolais and vinifies them himself with spontaneous fermentation, used barrels, and minimal sulfur, bottling under the Vin de France category. [About this wine] La Moire is a white cuvee made from Aligote. Grapes from overlooked Burgundian plots are handled gently and vinified naturally to capture the variety's signature tension and minerality.
