After taking over her family estate in 2008, Elise scaled down production to focus on a handful of cuvees, farming biodynamically and working with minimal intervention to express her Kimmeridgian terroir. [About this wine] Absolue Terre is a Blanc de Noirs from 100% Pinot Noir off a single Les Riceys parcel. Vinified and aged in terracotta jars and finished as a no-dosage Brut Nature, it is an ambitious cuvee that highlights the soil's character.
