Bush-vine fruit ferments spontaneously in buried amphorae, bottled with no added SO2, unfined and unfiltered. [About this wine] Cicala is an ancestral-method sparkling orange wine from old-vine Zibibbo (over 50 years old). Fermented on skins in amphora, then re-started with fresh must for a second fermentation in bottle, it rests for an extended period on the fine lees. Production is minuscule.
