A pioneer of Sicilian natural wine, COS is celebrated for biodynamic farming and for reviving fermentation and aging in buried terracotta amphorae (Pithos). [About this wine] Rami is COS's skin-contact white (orange) wine made from Grecanico and Insolia (Inzolia). It ferments spontaneously with indigenous yeast in concrete on the skins for a short maceration, then rests in concrete before bottling.
