A pioneer of biodynamics since 1989, the winery is famed for low-intervention, characterful wines made with minimal filtration and sulfur. [About this wine] Sivi means grey in Slovenian; this is a dry white made from 100% Pinot Grigio. Aged around 18 months in French barriques plus several months in bottle, it gains a golden, copper-tinged hue and complex aromatics. It is a cleaner white style, distinct from the heavily skin-contacted orange (Ambra) version.
